Recipe: Grisines

This recipe must be prepared one day in advance.


  • 550 gr flour
  • 200 gr water
  • 100 gr extra virgin olive oil
  • 40 gr butter
  • 5 gr fresh yeast
  • 10 gr salt
  • Oregano / thyme / rosemary to taste


Make a bowl with the flour. Mix separately in another container the water at 25 degrees with the fresh yeast, the oil and butter (previously melted).

Pour the mixture into the bowl and knead it, adding the flour slowly.

Once the mixture is homogeneous we will add the salt and aromatic herbs to taste.

Our advice: It’s better to use dried herbs, they provide more flavour and aromas in the dough.

Make a ball with the dough and put it in a clean container. Cover with transparent paper and leave to rest in the refrigerator until the next day.

Preheat the oven to 170 degrees.

The gresinis can be made in different ways. In this recipe we will work the dough by stretching it with a rolling pin, and then cut 1 cm wide strips.

Once formed, place the gresinis on a plate with sulfurized paper, previously vaporized with water. Sprinkle our gresinis with Flor de Sal.

Cook the gresinis for about 10 minutes until they are crispy.

Tip: You can eat it as an appetizer, with black olive tapenade, hummus or cheese assortment .
